Instructions


1. To prepare the mint and chocolate crinkle cookies, place the softened butter, sugar, and a pinch of salt in a bowl.


2. Using a hand mixer, cream the ingredients until smooth and soft.


3. Add the egg, mix well, and add the mint syrup. Continue to mix the batter for a few minutes to combine the ingredients thoroughly. Gradually sift in the flour and baking powder. Lastly, fold in the chocolate chips.


4. Once you have a soft, smooth batter, transfer it to a glass bowl covered with plastic wrap, ensuring the wrap does not touch the batter, and let it rest in the refrigerator for about 2 hours (it is advisable to prepare the dough the night before to allow it to firm up).


5. After the resting time, take the dough and shape it into balls, roughly the size of a walnut. Roll them in granulated sugar and then in powdered sugar.


6. Place the balls, well spaced apart, on a baking sheet lined with parchment paper. During baking, the magic will happen: the cookies will spread and the powdered sugar surface will create a beautiful "crinkled" effect.


7. Bake the cookies in a preheated static oven at 180°C for about 15 minutes. Once baked, refrain from touching the cookies as they will be very soft and could break. Allow them to cool before transferring them to a cookie jar.
