Ingredients:
For the Crust:
2 ½ cups all-purpose flour
1 tsp salt
1 tbsp sugar
1 cup unsalted butter (chilled, cubed)
6-8 tbsp ice water
For the Filling:
6 cups peeled and sliced apples (a mix of tart and sweet varieties like Granny Smith and Honeycrisp)
¾ cup sugar
¼ cup brown sugar
2 tbsp all-purpose flour
1 tsp cinnamon
¼ tsp nutmeg
1 tbsp lemon juice
1 tbsp butter (to dot on top)
Instructions:
Prepare the Crust:
In a large bowl, mix flour, salt, and sugar. Cut in butter until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, until the dough comes together. Divide into two discs, wrap in plastic, and refrigerate for at least 1 hour.
Make the Filling:
Toss the apple slices with sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice in a large bowl.
Assemble the Pie:
Preheat your oven to 375°F (190°C). Roll out one dough disc and fit it into a 9-inch pie pan. Add the apple mixture and dot with butter.
Roll out the second dough disc and place it over the filling. Seal and crimp the edges, and cut a few slits on top to release steam.
Bake:
Bake for 50–60 minutes, or until the crust is golden brown and the filling is bubbly. Let cool before serving.
