200 grams paneer, grated


1 cup all-purpose flour (maida)


2 tablespoons yogurt

1 cup sugar


1/2 cup water


1/2 teaspoon cardamom powder


A few strands of saffron (optional)


A few drops of rose water (optional)


For Frying:

1. Prepare the Sugar Syrup


In a saucepan, combine sugar and water and bring to a boil. Stir until the sugar dissolves completely, then reduce the heat to a low simmer. Add cardamom powder, saffron, and rose water, and continue simmering for about 5 minutes until the syrup thickens slightly. Remove from heat and set aside.


2. Make the Batter


In a mixing bowl, combine grated paneer, flour, yogurt, baking powder, and baking soda. Add water little by little, whisking to form a smooth, thick batter. It should have a consistency similar to pancake batter.


3. Heat the Oil


In a deep frying pan, heat ghee or oil over medium heat. The oil should be hot but not smoking.


4. Pipe the Jalebi
