Components:
• 1 and 3/4 cups all-purpose flour
• 1/2 cup unsweetened cocoa powder
• 1 cup granulated sugar
• 2 teaspoons baking powder
• ½ teaspoon baking soda
• ¼ teaspoon salt
• 2 large eggs
• ¾ cup milk
½ cup vegetable oil or melted butter
• 2 teaspoons vanilla extract
• 1 cup semi-sweet chocolate chips optional - but highly recommended!
Instructions:
1. Preheat oven to 375°F (190°C). Line a muffin tin with 12 paper liners or grease the muffin tin well.
2. In a large mixing bowl, whisk flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.
3.In another bowl, whisk together eggs, milk, oil or butter, and vanilla extract until smooth.
4.Pour the wet ingredients into the dry ingredients gradually; mix until just combined. Do not overmix! Some lumps are totally OK.
If using them, fold in the chocolate chips now.
5.Divide evenly between the prepared muffin tin, filling each cup about 3/4 of the way full.
6. Bake for 18-20 minutes or until a toothpick inserted into the center of one of the muffins comes out clean or with few moist crumbs attached.
7. Let them cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
8. Serve freshly baked chocolate muffins with ice-cold milk or your hot drink of your choice.
